Oh how sweet they are – Pumpkin Cookies


With Fall right around the corner and October a few short weeks away, it’s time to get those pumpkin and spice recipes out. My first Fall recipe is this pumpkin cookie. They are delicious and oh so easy to make. They are a soft almost cake like cookie. With or without icing, with or without nuts, with or without raisins, they are a mouth-watering treat to savor and enjoy slowly. Try them and enjoy!

The Recipe: 1/2 C. butter, 1 C. brown sugar,  1 C. mashed pumpkin (fresh pumpkin works best), 1/2 C. raisins, 1/2 C. nuts, 1 tsp. Vanilla, 2 C. flour, 1 tsp. baking soda, 1 tsp. cinnamon, 1 tsp. baking powder. Non-stick cooking spray or olive oil, icing – optional.

Pre-heat oven to 350 F., cream butter and sugar together (make sure it is well mixed), add pumpkin, raisins, nuts, and vanilla and mix well. Sift together the flour, baking soda, cinnamon, and baking powder. Slowly add to creamed mixture. Mix well. Drop by spoon full to a greased cookie sheet and bake for 11 minutes. If the girls are helping drop the cookies then we get about 2 dozen otherwise this batter should make about 3 dozen medium cookies.

There is no egg in this recipe. Cream the brown sugar and butter together until nice and creamy.

Add pumpkin, raisins, nuts and vanilla and mix well

Add the dry ingredient flour mixture to the creamy mixture and mix well.

The result is a beautiful and delicious cookie!
